“Griot or Griyo (グリヨー)is a typical Haitian dish which at first was reserved for the highest-class Haitian citizens, thus, a theory about its name speculates its origin from West African storytellers whom were considered very high classs in society. Over time, griyo became more popular with the general public.
Griyo is consisting of pork shoulder meat cubes,washed thoroughly with Sour orange juice and lime, lemon, or vinegar, then slowly simmered in water below boiling point,then marinaded with epis (a typical Haitian seasoning base),parsely, thyme, garlic, scotch bonnet pepper, onions, salt, tomato. Steamed until become very tender, then fried.
Griyo is usually served with fried plantain and Haitian pikliz (a cabbage based salad).
